Deutsch: Carnitas, wörtlich aus dem Spanischen "kleines Fleisch", sind ein Gericht der mexikanischen Küche, das aus dem Bundesstaat Michoacán stammt. Carnitas werden hergestellt indem Schweinefleisch gekocht wird bis das Kollagen im Fleisch so weit abgebaut is dass es mit der Hand oder Gabel auseinandergezogen werden kann. Anschließend wird es in Öl oder vorzugsweise Schmalz gebraten. Geeignet sind auch Teile wie Rüssel, Fuß und Schwanz, die in der deutschen Gegenwartsküche seltener verwendet werden.
English: Carnitas is pork cooked in a certain way, deep fried in its own lard, cooked in copper pots.
