Kaeng pa (pronunciation: /kæŋ pɑː/), also known as jungle curry, is a variety of Thai curry that originated from the forested areas of Thailand. The term "kaeng pa" is derived from the Thai words "kaeng" meaning curry and "pa" meaning forest or jungle.

Etymology

The term "kaeng pa" is of Thai origin. "Kaeng" (แกง) translates to curry in English, while "pa" (ป่า) means forest or jungle. The name reflects the dish's origins in the forested areas of Thailand, where traditional ingredients would have been sourced from the wild.

Ingredients

Kaeng pa is a spicy and aromatic curry that typically includes a variety of vegetables and herbs, meat (often game meat, although chicken, pork, fish or tofu can also be used), and a curry paste made from chillies, garlic, shallots, lemongrass, wild ginger, and shrimp paste. Unlike many other Thai curries, kaeng pa traditionally does not contain coconut milk, due to the lack of coconut trees in the northern and northeastern forests of Thailand where the dish originated.
