The preparation of Chakka Prathaman involves several steps:

  1. **Preparation of Jackfruit Pulp**: The ripe jackfruit bulbs are deseeded and ground into a smooth pulp.
  2. **Cooking with Jaggery**: The jackfruit pulp is cooked with melted jaggery until it thickens.
  3. **Adding Coconut Milk**: Thick and thin coconut milk is added to the mixture. The thin coconut milk is added first and cooked until the mixture thickens, followed by the addition of thick coconut milk.
  4. **Flavoring**: Cardamom powder is added for flavor.
  5. **Tempering**: Ghee is heated in a pan, and cashew nuts and raisins are fried until golden brown. This mixture is then added to the payasam.

Cultural Significance

Chakka Prathaman holds a special place in Kerala cuisine and is often prepared during the Onam festival, which is a major harvest festival in Kerala. It is also served during other important celebrations and family gatherings.
