Crempog

From WikiMD's medical encyclopedia

Crempog (also known as Ffroes) is a traditional Welsh pancake, distinct from the more commonly known British pancake. The recipe for Crempog varies, but common ingredients include flour, buttermilk, eggs, and fat, typically butter. Crempog is often served stacked high in a pile and traditionally eaten on Shrove Tuesday and birthday celebrations in Wales.

History

The history of Crempog dates back several centuries in Wales. The recipe has been passed down through generations, with each family often having their own unique variation. The tradition of eating Crempog on Shrove Tuesday and birthdays is believed to have originated from the old Welsh custom of holding a Crempog feast, known as a Crempogau, on these occasions.

Preparation and Serving

Crempog is typically made by combining flour, buttermilk, eggs, and butter to create a thick batter. This batter is then cooked on a griddle or in a heavy-bottomed frying pan until golden brown. The pancakes are traditionally served stacked high, often with butter and sugar, or with traditional Welsh toppings such as honey, cream, or bacon.

Variations

There are several variations of Crempog, including Crempog Furum and Crempog Las. Crempog Furum is a version made with yeast and Crempog Las is a version made with blueberries. These variations reflect the regional and familial differences in Crempog recipes across Wales.
