Maeun-tang
Maeun-tang is a popular Korean spicy fish stew that is made from fresh or saltwater fish. The name "Maeun-tang" comes from the Korean words "maeun" which means spicy, and "tang" which means soup or stew.
Ingredients
The main ingredient in Maeun-tang is fish, which can be any type of fresh or saltwater fish. Commonly used fish include carp, snapper, cod, and catfish. The fish is typically cut into large pieces and boiled with various vegetables such as watercress, bean sprouts, radish, and onion.
The soup is seasoned with gochugaru (Korean red chili pepper flakes), gochujang (Korean red chili pepper paste), soy sauce, garlic, and doenjang (Korean soybean paste).
Preparation
To prepare Maeun-tang, the fish is first cleaned and cut into large pieces. The vegetables are then washed and cut into bite-sized pieces. The fish and vegetables are then boiled together in a large pot of water.
Once the fish and vegetables are cooked, the seasonings are added to the pot. The soup is then simmered until it is reduced to the desired consistency.
Serving
Maeun-tang is typically served hot, and is often enjoyed with a bowl of rice and kimchi. It is a popular dish in Korea, especially during the colder months.
