Préfou


Préfou is a traditional French bread appetizer, originating from the Vendée region in western France. It is typically made from a baguette, which is sliced lengthwise and spread with a mixture of garlic, butter, and herbs before being baked until golden and crispy.

History

The name Préfou is derived from the French words pré (before) and four (oven). This is because the bread was traditionally used by bakers to test the temperature of their ovens before baking their main loaves. If the Préfou came out perfectly cooked, it indicated that the oven was at the right temperature.

Preparation

To prepare Préfou, a baguette is sliced lengthwise and spread with a mixture of crushed garlic, butter, and herbs such as parsley. The bread is then baked in a hot oven until it is golden and crispy. It is typically served warm, often as an appetizer or accompaniment to a meal.

Variations

While the traditional Préfou is made with garlic and butter, there are many variations of this dish. Some recipes include cheese, such as mozzarella or cheddar, while others may include additional ingredients like tomatoes, olives, or anchovies.
