History

Suffolk Gold was first produced in the 1980s by the Suffolk Farmhouse Cheeses company, a family-run business based in Suffolk, England. The company was founded by Jason and Katharine Salisbury, who were inspired by the rich dairy farming heritage of the region.

Production

The production of Suffolk Gold begins with the milking of Guernsey cows, a breed known for the high butterfat content of their milk. The milk is then pasteurized and combined with a starter culture and rennet, which causes the milk to coagulate and form curds. The curds are cut, stirred, and heated before being placed into molds and pressed to remove whey. The cheese is then aged for a period of time to develop its flavor.
