Sussex Pond Pudding is a traditional British dessert originating from the county of Sussex, in the South East of England. It is a type of boiled pudding, typically made with a suet pastry, and filled with a whole lemon, butter, and sugar.
History
The origins of Sussex Pond Pudding are not entirely clear, but it is believed to have been a popular dish in Sussex since at least the 17th century. The name 'pond pudding' is thought to come from the 'pond' of melted butter and sugar that forms inside the pudding when it is cut open.

The main ingredients of Sussex Pond Pudding are:

Preparation
To prepare Sussex Pond Pudding, the suet pastry is first rolled out and used to line a pudding basin. The whole lemon, butter, and sugar are then placed inside the pastry. The pastry is then folded over the filling and the pudding is steamed for several hours.
Serving
Sussex Pond Pudding is traditionally served hot, often with custard or cream. When the pudding is cut open, the melted butter and sugar 'pond' inside should pour out, creating a sweet sauce for the pudding.
Variations
There are several variations of Sussex Pond Pudding. One popular variation is Kentish Well Pudding, which is similar but includes a layer of marzipan inside the pastry. Another variation is Lancashire Pond Pudding, which uses apples instead of a lemon.
