Vada Pav (pronunciation: /ˈvɑːdə pɑːv/), also spelled Vada Pao, is a popular vegetarian fast food dish native to the Indian state of Maharashtra. The dish consists of a deep-fried potato dumpling placed inside a bread bun (pav) sliced almost in half through the middle. It is generally accompanied with one or more chutneys and a green chili pepper.

Etymology

The term "Vada Pav" is derived from the words "Vada" meaning a deep-fried potato dumpling and "Pav" meaning a type of Indian bread. Both words are of Marathi origin, the official language of the state of Maharashtra where the dish is popular.

Ingredients and Preparation

The Vada is made from boiled potatoes, mashed and seasoned with various spices, which are then shaped into a ball, coated in a batter of besan (chickpea flour), and deep-fried. The Pav is a small loaf of bread, similar to a dinner roll, which is sliced almost in half, spread with chutney, and then the vada is placed inside.
