Complex carbohydrates (pronunciation: /kəmˈpleks ˌkɑːrbəʊˈhaɪdreɪt/) are a type of carbohydrate that are made up of sugar molecules strung together in long, complex chains. They are found in foods such as peas, beans, whole grains, and vegetables.

The term "complex carbohydrate" was first used in the mid-20th century to distinguish these longer-chain molecules from simple carbohydrates, which are made up of just one or two sugar molecules.
