Pepeçura is a traditional Turkish dessert originating from the Black Sea Region of Turkey. It is a type of pudding made primarily from grape must, which is the freshly pressed juice containing the skins, seeds, and stems of the fruit. The preparation of Pepeçura involves several steps:

  1. The grape must is first boiled to reduce and concentrate its flavor.
  2. Cornstarch is dissolved in a small amount of cold water to create a slurry.
  3. The slurry is then added to the boiling grape must along with sugar.
  4. The mixture is continuously stirred until it thickens to a pudding-like consistency.
  5. Once thickened, the mixture is poured into serving dishes and allowed to cool and set.

Serving

Pepeçura is typically served chilled. It can be garnished with nuts, such as walnuts or hazelnuts, or with a sprinkle of cinnamon for added flavor.
