Chicken Fricassee is a classic French dish that can be easily adapted to fit a keto diet. This recipe is rich in protein and healthy fats, making it a perfect choice for those following a ketogenic lifestyle.
Ingredients[edit]
- 4 chicken thighs, bone-in and skin-on
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1/2 cup white wine
- 1 cup chicken broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions[edit]
- Season the chicken thighs with salt and pepper.
- Heat the olive oil in a large skillet over medium heat. Add the chicken thighs, skin-side down, and cook until the skin is golden brown and crispy. Remove the chicken from the skillet and set aside.
- In the same skillet, add the onion, garlic, and mushrooms. Cook until the vegetables are softened.
- Add the white wine to the skillet, scraping the bottom of the pan to loosen any browned bits. Allow the wine to simmer until it has reduced by half.
- Add the chicken broth to the skillet and bring to a simmer. Return the chicken thighs to the skillet, nestling them into the broth. Cover the skillet and let it simmer for about 20 minutes, or until the chicken is cooked through.
- Stir in the heavy cream and let the sauce simmer for a few more minutes, until it has thickened slightly.
- Season the fricassee with additional salt and pepper if needed, and garnish with fresh parsley before serving.
