Eggplant fries

Eggplant Fries are a low-carb alternative to traditional potato fries. Made from sliced eggplant coated in a seasoned breading, they are baked or fried until crispy and golden. They provide a unique flavor and are a great way to incorporate more vegetables into the diet.

Preparation

While there are many variations of eggplant fries, here's a basic ketogenic-friendly version using almond flour for the breading.

Ingredients

  • 1 medium eggplant
  • 1 cup almond flour
  • 2 eggs, beaten
  • 1 tsp garlic powder
  • 1 tsp paprika or smoked paprika
  • Salt and pepper to taste
  • Olive oil or avocado oil (for frying or brushing)

Instructions

  1. Preheat oven to 425°F (220°C) if baking.
  2. Peel the eggplant and cut into fry-shaped strips.
  3. In a bowl, combine almond flour, garlic powder, paprika, salt, and pepper.
  4. Dip each eggplant strip into the beaten eggs, then coat with the almond flour mixture.
  5. If baking: Place the coated eggplant strips on a baking sheet lined with parchment paper. Brush lightly with oil. Bake for 20-25 minutes, flipping halfway, until golden and crispy.
  6. If frying: Heat oil in a skillet over medium heat. Fry the eggplant strips until golden, then place on a paper towel to drain excess oil.

Serving

Serve with a dipping sauce of choice, such as marinara sauce, aioli, or a keto-friendly ranch dip.
