Green Gazpacho is a chilled, blended soup traditionally from Spain. This keto-adapted version replaces high-carb ingredients with green veggies, making it both refreshing and low in carbohydrates. This dish is perfect for hot weather, providing hydration and nutrition without being heavy.
Ingredients[edit]
- 2 cucumbers, peeled and chopped
- 1 green bell pepper, chopped
- 2 avocados, peeled and pitted
- 1 jalapeño, deseeded and chopped (optional for heat)
- 3 green onions, chopped
- 2 cups spinach or kale leaves
- 2 garlic cloves
- 1/4 cup fresh cilantro or parsley
- 1/4 cup olive oil
- 2 tbsp lime or lemon juice
- Salt and pepper to taste
- Cold water, as needed for consistency
Preparation[edit]
- In a blender or food processor, combine all the ingredients, starting with the cucumbers and green pepper.
- Blend on high until smooth. Add cold water if needed to reach your desired consistency.
- Season with salt and pepper, adjusting to taste.
- Chill the gazpacho in the refrigerator for at least 2 hours before serving.
- Serve cold, garnished with diced vegetables, a drizzle of olive oil, or fresh herbs.

- Accompany with keto-friendly bread or croutons for added texture.
