Grilled Flatbread Pizzas (Keto Friendly)[edit]
Ingredients[edit]
- Almond Flour - 2 cups
- Mozzarella Cheese - 1.5 cups
- Cream Cheese - 2 tablespoons
- Eggs - 2
- Garlic Powder - 1 teaspoon
- Italian Seasoning - 1 teaspoon
- Olive Oil - 2 tablespoons
- Tomato Sauce - 1 cup
- Pepperoni - 1/2 cup
- Bell Peppers - 1/2 cup, sliced
- Onions - 1/2 cup, sliced
- Mushrooms - 1/2 cup, sliced
- Black Olives - 1/4 cup, sliced
- Salt and Pepper - to taste
Instructions[edit]
- Preheat your grill to medium heat.
- In a microwave safe bowl, combine the almond flour, 1 cup of mozzarella cheese, and cream cheese. Microwave for 1 minute, or until the cheese is fully melted.
- Add the eggs, garlic powder, and Italian seasoning to the bowl and mix until a dough forms.
- Roll out the dough between two pieces of parchment paper until it's about 1/4 inch thick.
- Brush one side of the dough with olive oil and place it oil-side down on the preheated grill.
- Grill the dough for about 2-3 minutes, or until it's lightly browned.
- Brush the top side of the dough with olive oil and flip it over.
- Spread the tomato sauce over the dough and top with the remaining mozzarella cheese, pepperoni, bell peppers, onions, mushrooms, and black olives.
- Close the grill lid and cook for another 5-7 minutes, or until the cheese is melted and the crust is crispy.
- Season with salt and pepper to taste, then slice and serve.
