Instructions

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Season the chicken thighs with salt and pepper.
  3. Heat the olive oil in a large oven-safe skillet over medium heat.
  4. Add the chicken thighs to the skillet and cook for about 5 minutes on each side, until they are golden brown.
  5. Remove the chicken thighs from the skillet and set them aside.
  6. In the same skillet, add the minced garlic and sliced mushrooms. Cook for about 5 minutes, until the mushrooms are browned and the garlic is fragrant.
  7. Add the chicken broth to the skillet and bring it to a simmer.
  8. Return the chicken thighs to the skillet, nestling them in the mushrooms and broth.
  9. Transfer the skillet to the preheated oven and bake for 15 minutes, until the chicken thighs are cooked through.
  10. Remove the skillet from the oven and stir in the heavy cream.
  11. Sprinkle the dish with chopped parsley before serving.
