Keto Rhubarb Tart is a delicious, low-carb dessert that is perfect for those following a keto diet. This recipe is easy to prepare and is packed with flavor.
Ingredients[edit]
- Crust
- 1 1/2 cups almond flour
- 1/4 cup erythritol
- 1/2 cup melted butter
- 1/2 teaspoon vanilla extract
- Filling
- 2 cups chopped rhubarb
- 1/4 cup erythritol
- 1 tablespoon lemon juice
- 1/2 teaspoon xanthan gum
- Topping
- 1 cup heavy cream
- 1 tablespoon erythritol
- 1/2 teaspoon vanilla extract
Instructions[edit]
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the almond flour, erythritol, melted butter, and vanilla extract. Press this mixture into the bottom of a tart pan.
- Bake the crust for 10 minutes, or until it is lightly golden.
- While the crust is baking, combine the rhubarb, erythritol, lemon juice, and xanthan gum in a saucepan over medium heat. Cook until the rhubarb is soft and the mixture has thickened.
- Pour the rhubarb mixture over the baked crust.
- In a separate bowl, whip the heavy cream, erythritol, and vanilla extract until soft peaks form. Spread this over the rhubarb layer.
- Chill the tart in the refrigerator for at least 2 hours before serving.
