Keto Spring Veggie and Goat Cheese Omelet

This is a recipe for a delicious and healthy Keto Spring Veggie and Goat Cheese Omelet. This dish is perfect for those following a ketogenic diet, as it is low in carbs and high in healthy fats and proteins.

Ingredients

Instructions

  1. Heat the olive oil in a non-stick skillet over medium heat.
  2. Add the spring vegetables to the skillet and sauté until they are tender, about 5 minutes.
  3. In a separate bowl, whisk the eggs until they are well beaten. Season with salt and pepper.
  4. Pour the beaten eggs over the vegetables in the skillet. Cook until the eggs are set, about 3-4 minutes.
  5. Sprinkle the crumbled goat cheese over the top of the omelet. Fold the omelet in half and cook for an additional 1-2 minutes, until the cheese is melted.
  6. Serve the omelet hot, garnished with additional spring vegetables if desired.
