Keto Zucchini Pizza Casserole[edit]
Keto Zucchini Pizza Casserole is a delicious and healthy alternative to traditional pizza. It's low in carbs, high in protein, and perfect for those following a keto diet.
Ingredients[edit]
- 4 medium zucchini, sliced
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 2 cups shredded part-skim mozzarella cheese
- 1 cup shredded cheddar cheese
- 1 pound ground beef
- 1/2 cup chopped onion
- 1 can (15 ounces) tomato sauce
- 1 green bell pepper, chopped
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
Instructions[edit]
- Preheat oven to 400°. Place zucchini in colander; sprinkle with salt. Let stand 10 minutes, then squeeze out moisture.
- Combine zucchini with eggs, Parmesan and half of mozzarella and cheddar cheeses. Press into a greased 13x9-in. or 3-qt. baking dish. Bake 20 minutes.
- Meanwhile, in a large saucepan, cook beef and onion over medium heat, crumbling beef, until meat is no longer pink. Add tomato sauce; stir in green pepper and spices.
- Spoon over zucchini mixture. Sprinkle with remaining cheeses. Bake until heated through, about 20 minutes longer.
