A delicious and keto-friendly recipe, Lemon Glazed Spice Fritters are a perfect treat for those following a keto diet.
Ingredients[edit]
- 1 cup of almond flour
- 1/4 cup of coconut flour
- 1/2 teaspoon of baking powder
- 1/4 teaspoon of salt
- 1 teaspoon of cinnamon
- 1/2 teaspoon of nutmeg
- 1/4 teaspoon of allspice
- 2 eggs
- 1/4 cup of erythritol
- 1/2 cup of almond milk
- 1 teaspoon of vanilla extract
- Zest of 1 lemon
- Coconut oil for frying
For the glaze:
- Juice of 1 lemon
- 1/2 cup of powdered erythritol
Instructions[edit]
- In a large bowl, combine the almond flour, coconut flour, baking powder, salt, cinnamon, nutmeg, and allspice.
- In another bowl, whisk together the eggs, erythritol, almond milk, vanilla extract, and lemon zest.
- Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
- Heat the coconut oil in a frying pan over medium heat.
- Drop spoonfuls of the dough into the hot oil, frying until golden brown on each side.
- Remove the fritters from the oil and drain on paper towels.
- To make the glaze, combine the lemon juice and powdered erythritol in a small bowl.
- Drizzle the glaze over the fritters before serving.
