Low Carb Shepherd's Pie

Low Carb Shepherd's Pie is a delicious and healthy alternative to traditional shepherd's pie. This recipe is perfect for those following a keto diet as it is low in carbs and high in protein and healthy fats.

Ingredients

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. In a large skillet, heat the olive oil over medium heat. Add the onions, carrots, and garlic and cook until softened.
  3. Add the ground beef to the skillet and cook until browned. Drain any excess fat.
  4. Stir in the beef broth and bring to a simmer. Cook for 5-10 minutes, or until the broth has reduced by half.
  5. While the beef is cooking, steam the cauliflower florets until tender. Mash the cauliflower with the heavy cream until it reaches a smooth consistency. Season with salt and pepper.
  6. Transfer the beef mixture to a baking dish. Spread the mashed cauliflower over the top of the beef.
  7. Sprinkle the shredded cheddar cheese over the cauliflower.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Allow the pie to cool for a few minutes before serving.
