Cauliflower Chicken Alfredo

Cauliflower Chicken Alfredo is a delicious, keto-friendly dish that combines the rich, creamy taste of Alfredo sauce with the nutritional benefits of cauliflower and chicken. This recipe is perfect for those following a keto diet as it is low in carbs and high in protein and healthy fats.

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Toss the cauliflower florets in olive oil, salt, and pepper, then spread them out on a baking sheet.
  3. Bake the cauliflower for 20-25 minutes, or until it's tender and slightly browned.
  4. While the cauliflower is baking, season the chicken breasts with salt and pepper, then cook them in a large skillet over medium heat until they're no longer pink in the center.
  5. Remove the chicken from the skillet and set it aside to rest.
  6. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook until it's fragrant.
  7. Stir in the heavy cream and Parmesan cheese, then reduce the heat to low and simmer the sauce until it thickens.
  8. Cut the cooked chicken into slices, then add it to the skillet along with the roasted cauliflower. Stir everything together until it's coated in the Alfredo sauce.
  9. Garnish with fresh parsley before serving.
