Homemade Chicken Stock[edit]
Homemade chicken stock is a flavorful and nutritious base for soups, stews, and sauces. It's a great way to use up leftover chicken bones and vegetable scraps, and it's also a fantastic source of collagen, which is beneficial for joint health. This recipe is keto-friendly, meaning it's low in carbs and high in fat.
Ingredients[edit]
- 1 whole chicken carcass, or 2-3 pounds of chicken bones
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 4 cloves of garlic, smashed
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons apple cider vinegar
- Water to cover
Instructions[edit]
- Place the chicken bones in a large pot or slow cooker.
- Add the carrots, celery, onion, and garlic to the pot.
- Sprinkle the salt and pepper over the ingredients in the pot.
- Pour the apple cider vinegar over everything.
- Add enough water to the pot to cover the ingredients by an inch or two.
- Bring the mixture to a boil over high heat, then reduce the heat to low and let it simmer for 12-24 hours. The longer it simmers, the more flavorful and nutrient-dense the stock will be.
- Strain the stock through a fine-mesh sieve into a large bowl or pot. Discard the solids.
- Let the stock cool, then store it in the refrigerator for up to a week, or freeze it for up to 3 months.
