Homemade Chicken Stock

Homemade chicken stock is a flavorful and nutritious base for soups, stews, and sauces. It's a great way to use up leftover chicken bones and vegetable scraps, and it's also a fantastic source of collagen, which is beneficial for joint health. This recipe is keto-friendly, meaning it's low in carbs and high in fat.

Ingredients

Instructions

  1. Place the chicken bones in a large pot or slow cooker.
  2. Add the carrots, celery, onion, and garlic to the pot.
  3. Sprinkle the salt and pepper over the ingredients in the pot.
  4. Pour the apple cider vinegar over everything.
  5. Add enough water to the pot to cover the ingredients by an inch or two.
  6. Bring the mixture to a boil over high heat, then reduce the heat to low and let it simmer for 12-24 hours. The longer it simmers, the more flavorful and nutrient-dense the stock will be.
  7. Strain the stock through a fine-mesh sieve into a large bowl or pot. Discard the solids.
  8. Let the stock cool, then store it in the refrigerator for up to a week, or freeze it for up to 3 months.
