Overview
Kale Pesto is a modern twist on the classic pesto sauce. Utilizing kale as its main ingredient, it provides an earthy flavor and added nutritional benefits compared to traditional basil pesto.
Ingredients
- 2 cups fresh kale leaves, washed and dried
- 1/2 cup nuts (such as walnuts, pine nuts, or almonds)
- 2-3 garlic cloves
- 1/2 cup olive oil
- 1/4 cup grated Parmesan cheese (omit for vegan version)
- Salt and black pepper to taste
- Lemon juice from half a lemon
Preparation
1. In a food processor, combine kale, nuts, and garlic. Pulse until coarsely chopped. 2. While the food processor is running, slowly drizzle in the olive oil until the mixture becomes smooth and well-combined. 3. Add in the grated Parmesan cheese, salt, pepper, and lemon juice. Pulse until combined. 4. Taste and adjust seasonings as needed.
