Low Carb Chicken Skewers with Fries and Dip

Ingredients

Instructions

  1. Cut the chicken into 1-inch cubes and place them in a bowl.
  2. Add the olive oil, garlic powder, paprika, salt, and pepper to the bowl and mix until the chicken is well coated.
  3. Thread the chicken onto skewers and set aside.
  4. Preheat your grill or broiler and cook the chicken skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through.
  5. While the chicken is cooking, cut the zucchini into fries shape.
  6. In a separate bowl, mix the parmesan cheese and almond flour.
  7. Dip each zucchini fry into the beaten egg, then into the cheese and flour mixture.
  8. Place the coated zucchini fries onto a baking sheet and bake at 200°C for 15-20 minutes, until golden and crispy.
  9. To make the dip, mix the mayonnaise, Dijon mustard, and lemon juice in a small bowl.
  10. Serve the chicken skewers with the zucchini fries and dip on the side.
