Low Carb Eggnog

Low Carb Eggnog is a delicious, creamy, and festive drink that is perfect for the holiday season. This recipe is keto-friendly, meaning it is low in carbs and high in fats, making it suitable for those following a ketogenic diet.

Instructions

  1. In a medium saucepan, combine the almond milk and heavy cream. Heat over medium heat until it begins to steam, but do not let it boil.
  2. In a separate bowl, whisk together the egg yolks and erythritol until well combined.
  3. Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly to prevent the eggs from scrambling.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
  5. Remove from heat and stir in the vanilla extract, nutmeg, and cinnamon. If desired, stir in the rum or bourbon.
  6. Chill in the refrigerator for at least 2 hours before serving.
