Ingredients

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a bowl, combine the almond flour, melted butter, and half of the shredded cheddar cheese. Mix until well combined.
  3. Press the mixture into the bottom of a mini muffin tin, creating a small well in the center of each.
  4. Bake for 10 minutes, or until the edges are golden brown.
  5. While the tartlet crusts are baking, cook the ground beef in a skillet over medium heat until no longer pink. Drain the excess fat.
  6. Add the taco seasoning and water to the skillet with the beef. Stir until well combined and simmer for 5 minutes.
  7. Once the tartlet crusts are done baking, fill each with the taco meat. Top with the remaining shredded cheddar cheese.
  8. Return the tartlets to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  9. Top each tartlet with a dollop of sour cream, and sprinkle with chopped green onions and diced tomatoes before serving.
