Overview
A Lox Omelet combines the rich flavors of smoked salmon with fluffy eggs. This dish is a luxurious way to start the day while keeping it keto-friendly.
Ingredients
- 3 large eggs
- 2 oz smoked salmon (lox)
- 1 oz cream cheese
- Fresh chives, chopped
- 1 tbsp butter or olive oil
- Salt and pepper, to taste
Preparation
- 1. In a bowl, beat the eggs with salt and pepper until well combined.
- 2. Heat butter or olive oil in a non-stick skillet over medium heat.
- 3. Pour the beaten eggs into the skillet.
- 4. As the eggs start to set, gently lift the edges with a spatula and tilt the pan to allow the uncooked eggs to flow underneath.
- 5. When the omelet is nearly set but still a little soft in the center, place the smoked salmon and cream cheese on one half.
- 6. Sprinkle with chopped chives.
- 7. Carefully fold the other half of the omelet over the fillings.
- 8. Cook for an additional 1-2 minutes until the omelet is fully set and the cream cheese is slightly melted.
- 9. Slide the omelet onto a plate, garnish with additional chives, and serve.
