Yogurt Chicken Kebabs with Beet Carpaccio

Yogurt Chicken Kebabs with Beet Carpaccio is a delicious and healthy keto friendly recipe. It is a perfect blend of protein and vegetables, making it a balanced meal for those following a ketogenic diet.

Instructions

  1. In a bowl, combine the Greek yogurt, olive oil, garlic powder, cumin, paprika, salt, and pepper. Add the chicken cubes and mix until well coated. Cover and refrigerate for at least 2 hours.
  2. Preheat your grill or broiler. Thread the chicken cubes onto skewers and grill for about 10 minutes, turning occasionally, until the chicken is cooked through.
  3. While the chicken is grilling, prepare the beet carpaccio. Arrange the beet slices on a plate, drizzle with olive oil and lemon juice, and season with salt and pepper.
  4. Serve the chicken kebabs on top of the beet carpaccio, garnished with fresh parsley.
