Low Carb Orange and Gingerbread Cheesecake
This is a delicious and keto-friendly recipe for a Low Carb Orange and Gingerbread Cheesecake. It's a perfect dessert for those who are on a keto diet and love a hint of citrus and spice in their sweet treats.
Ingredients
- 2 cups of almond flour
- 1/2 cup of butter, melted
- 1/4 cup of granulated sweetener
- 1 tablespoon of gingerbread spice
- 3 (8 oz) packages of cream cheese, softened
- 1 cup of granulated sweetener
- 3 large eggs
- 1 cup of heavy cream
- Zest and juice of 1 orange
- 1 teaspoon of vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the almond flour, melted butter, granulated sweetener, and gingerbread spice. Press this mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, beat the cream cheese and granulated sweetener until smooth and creamy.
- Beat in the eggs, one at a time, ensuring each is incorporated before adding the next.
- Stir in the heavy cream, orange zest, orange juice, and vanilla extract until well combined.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 1 hour, or until the center is set and the top is lightly browned.
- Allow the cheesecake to cool in the oven with the door slightly ajar.
- Once cooled, refrigerate for at least 4 hours, or overnight, before serving.
